I ran a fairly similar list to the above to decent success. I think I had one less troop with more soldiers in the remaining troops.

Unfortunately, that's not how that works. Whether they are alive or dead, if they are part of your roster for the battle, then you aren't all-barbarian.

To be quite honest the Humans of Icingstead are actually quite effective overall.  It might be a bit different to run the giants of Icingstead without giants but your army will still be quite effective.
