Wegmans makes a wing sauce that is pretty good (Wegmans is a chain of grocery stores)

 

I love puting it on eggplant chunks and stuff. The secret to good buffalo wing sauce is the ratio of the hotsauce to butter and vinegar. Most places either forget the butter or vinegar.

 

 

I've love to have the recipe for the Olive Garden's Shrimp Primavera and Red Lobster's chedder biscuits. ;)

I have some older cookbooks that duplicate restaurant and other pre-made goodies. I've been meaning to dig them up.

 

But no matter what, I can't find the recipe I want the most! Chi-Chis used to have the BEST tortilla soup. I so want that recipe!

I'll ask my Uncle for you, he used to be a regional manager for Chi-Chis, so he may know.

The nastiest thing I've ever had to make was back in college and had to make the wing sauce.. Liquid margarine before it became availible as 'squeezable spread' was a huge shock to a kid used to butter being in either stick or tub forms.. A gallon of Texas Pete, a gallon of liquid margarine, and about two cups of white vinegar for the 'hot' and skip the vinegar and reduce the Texas Pete for the 'mild'... it was gross to look at as you're mixing it, more disgusting to listen to it gloop-gloop into the storage tubs, and really the worst wing sauce I've ever tasted.. Now the Kraus's Pizza up the hill from where I grew up... genuine Buffalo Wings made by *gasp* someone who grew up and learned how to make them in Buffalo! No breading, scorchingly tasty sauce, and served up with blue cheese dressing and celery...

When I comes to big chain restraunts be they fast food or "sit down" style I've almost never ate anything that made me think I really wanted the recipe. Perhaps I'm just prejudice against chain restraunts but the only time I've ever wanted to know how something was made while eating out was a smaller restraunts usually where the owner is the cook. I think this comes from growing up with great cooks in the family. My mom is a superior cook and my grandmother on my fathers side was a local legend. I fancy myself pretty a pretty decent cook and my wife can bake anything but seriously my grandmother had forgotten more about food than most people my age could ever hope to know. If there is one thing I regret it's not learning more from my grandmother about cooking and canning.
