No painting today. Chopping. Back and hands hurt. Bleh.

 

Now to make a pie.

No pies here. Just cranberry relish. To put on everything. Put it on the turkey. Put it on the Thanksgiving Sandwiches. Put it on the vanilla ice cream. Put it on a spoon and straight in my belly...

Old family recipe handed down through generations of BH&G cookbooks:

 

Prep: 15 minutes, Chill: 2 hrs

Makes: 2.5 cups

3/4 cup apple or orange juice (I use orange juice)

1/2 to 2/3 cup sugar (I use 1/2 cup Stevia In The Raw; SWMBO's diabetic)

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg

dash ground cloves (go lightly here)

1 12-oz pkg (3 cups) fresh cranberries

1/2 cup golden raisins

1/2 cup chopped pecans (I substitute chopped walnuts)

 

In medium saucepan, combine juice, sugar, cinnamon, nutmeg, and cloves.

Stir over medium heat until sugar is dissolved.

Add cranberries and raisins.

Bring to boiling; reduce heat.

Stir for 3-4 minutes or until cranberries pop.

Remove from heat.

Stir in nuts.

Cover and chill at least 2 hours before serving.

Awesome! Sounds a lot like the cranberry relish my grandma made (my mother now makes it so my grandma doesn't have any stress - she gets to just show up while the rest of us worry about cooking) except hers also has tangerines in it. Maybe not the raisins? I'm not entirely sure.

I won't touch the gelatinous canned stuff, but cranberry relish...  :wub:

 

My grandma had a running gag when she brought her cranberry relish. Several years back, she showed up with both her homemade cranberry relish and also a can of the grossness. We were all "Why did you bring that?  <_< " And she was all "Dunno, thought someone might prefer this over mine." To which we were all questioning who would ever touch that, especially with her wonderful cranberry relish? Turned out it had been in her pantry for a couple of years and she was hoping that someone would eat it so that she didn't have to throw it out. Every year after that, she kept bringing the exact same can of cranberry grossness to Thanksgiving and Christmas - it had become a little rusty last I saw it.

LOL! Somehow I'm not surprised this ended up here!

 

Sour cream and chocolate cake

 

Melt a half a stick of semi sweet chocolate with 1/2 cup of butter and 1 cup of water in the microwave and let it sit.

 

Mix together two room temperature egg yolks with 8oz of sour cream until creamy in texture. (Remember to SEPARATE the yolk from the white and set the white aside)

 

Add two cups of sugar to the yolk mix and 1 and 1/2 teaspoon of vanilla extract and mix again.

 

Add two cups of cake flour, sifted with one teaspoon of salt and a 1 teaspoon plus 1/4 teaspoon of baking soda. Add the flour little by little while mixing it into the dough.

 

Once that's mixed, take out your chocolate mixture you did at the beginning and carefully, slowly mix the chocolate into the batter. Mix it again.

 

Whip your egg whites til fluffy and add to chocolate dough and fold it into it.

 

Oven should be set on 350. Pour dough into a bunt cake pan and let it cook in the oven for about 30 minutes or until finished.

 

Icing: people do their icing differently but I'll share mine anyway.

 

One entire 8oz container of cream cheese

One entire box of powdered sugar

Half a stick of butter

1 teaspoon vanilla

 

Mix this together until creamy

 

Microwave 1/4 stick of unsweet chocolate with one tablespoon of butter.

 

Icing your cake. Let it sit a for about ten minutes so the icing settles and your chocolate thickens a bit and then pour on your unsweet chocolate syrup on top.

 

Voilà.

Ohh this is all sounds yummy (especially MM's Sour Cream Cake).  My family has the best cranberry relish recipe! Unfortunately, it's a secret.....

 But, ours has Oranges and Apples. No raisins but, Dsmiles recipe sounds super yummy

Did you know you can make a very healthy chocolate mousse very easy?

 

Just blend an avocado with cocoa powder.

Sweeten with a bit of raw honey if you want.

Sprinkle some Coconut shavings over it.

 

 

Enjoy without feeling guilty and Yes it does taste sweet.

Except I'm allergic to avocado. :down:

 

My cranberry relish is a little simpler:

 

12 ounces cranberries

1/2 cup juice from oranges

1/2 cup sugar

1 tablespoon fresh peeled and grated ginger

1 teaspoon cinnamon

1/8 cup molasses

1/2 teaspoon salt

 

Put everything but molasses in a pot. Cookon lowish heat until berries start to pop. Add molasses and remove from heat. Allow to cool uncovered, will thicken.

My Step Grandmother makes the best cranberry relish. She passed the recipe along to me:

 

1 apple, cored

1 orange

2 pounds cranberries

1 cup (or so) sugar

 

Cut apple and orange into pieces small enough to fit into your meat grinder. You can use a food processor, but it is easyto go too far and make mush.

 

Run apple, orange and cranberries through the (clean) meat grinder, medium grind if you have multiple plates. Add sugar to taste; you will need more than you think you do. Best if you let it sit over night, but an hour or so is sufficient.

 

So simple and so good. I eat the leftovers with yogurt for breakfast.

Suppose I could add another tradition

 

'Lemonade'

 

1 container of frozen limeade juice

1 container of frozen lemonade

half a container of frozen orange juice

4-5 cups of water

3 cups of vodka (Or just substitute with moonshine) 

Chilled ginger ale

 

You mix the ginger ale into the lemonade mix as you serve it. It'll go flat and gross if you mix the ginger ale and let it sit. 

 

so combine 'lemonade' into a cup with a bit of ginger ale, stir and serve. 

 

Also...make sure to serve this AFTER the cooking is finished, and definitely don't give it to the bridal party before a wedding. Heh....................

 

It's delicious.

 

 

I tend to just use an entire bottle of vodka, because there tends to be less than a cup left over anyway.

 

 

It is delicious.

This year we were asked to bring green bean casserole and mashed potatoes. My mother in law goes the extra soupy route, so I let my wife be in charge of that. I decided to go a different route and take a risk: (note that, while hilarious, this site is NSFW)

It was a big hit! The bacon added something it was missing, for sure. I will likely add it next time I make it (and it was rather easy to make).
