A Greek platter, Grilled lambchops, Dolmadakia, Souvlaki, Stuffed peppers, Olives, Pita Bread, Garlic Sauce, Salad, Gyros, Potatoes from the oven. A glass of red wine to go with it. Combined with the warm weather it will feel like I'm in Greece where we enjoyed several of our best vacations. Salad (bean, green, pasta... something cold and easy to throw together with a minimum of heat required to prepare). I take a tortilla shell, smear it with a generous portion of garlic hummus, a few slices of salami (or some leftover pulled chicken), throw on some chopped veggies/salad, wrap it up and chow down.
