Grilled chicken, refrigerated and cut into small pieces, with shredded cheese, diced tomatoes, grapes and jicama, mixed with (for me)a creamy dressing like green goddess or poppy-seed (Mrs. Wulf likes ranch...). Sometimes I add some cajun seasoning blend. Between two pieces of sourdough or potato bread. With a pickle spear and either some lays potato chips or veggie sticks on the side. Bagged salad, tuna or egg salad sandwiches, leftovers.... usually served with a plate of sliced tomato and cucumber from the garden. I used to get rotisserie chickens, but I'm not doing casual runs to the grocery store this summer. We have a middle-eastern place near us that does great take out, they have a hummus and grilled chicken or gyro meat platter with salad and pita that we love. Just had it last night: Grilled beef and cold salad. New supermarket opened up near my house and has some kind of strips that are about like a tri-tip. Perfect for grilling (I usually carve these out of the full tritip, my favorite cut), just need a bit of s&p. I'm using their deli's red potato salad to save the heat of boiling the potatoes myself. I'd probably eat that every night this week, but we also do burgers, chicken thighs (eaten as sandwiches on burger buns), pork loins, etc. It's grilling season! For the burgz and thighz, I vary from my usual 's&p' for grilled meats. Weber's grill seasonings are decent, I use their burger seasoning...for the chicken (and turkey cutlets) I use a couple kinds of chicken, but our favorite is 'beer can chicken', which may be McCormick's. Pro-tip for grillers: splash out for a thermoworks instant read thermometer. I've been wanting one forever but getting by with cheap thermos that don't work well and break often. I got teh Thermapen mk4 on sale and it would be well worth teh full price (many times over, given how much I've spent on 'cheap' thermos over the years). For some reason, if it's cooked outside on a hot grill/BBQ, and then eaten outside, it magically becomes my favourite hot day meal. It doesn't need to be cool and refreshing. Generally speaking, hot dogs and burgers with plenty of available toppings are at the top the list. Served with a variety of flavored potato crisps (BBQ, Smokey Cheese, Sea Salt, Black Pepper Jalapeño...plain ones are OK too). Drinks served with ice in them.
