Since I listen to folk and enjoy Child Ballads, technically they all are covers.  I was not around for the originals (don't believe the rumors that I was) I can not say which I like better but I think it would be the modern.

Do live versions vs studio recordings count? Because I believe the live S&M version of Metallica's Fuel to be far superior to the original.

 

Beyond that, I'll second Lindsey Stirling's Radioactive, and also mention just about anything from Linkin Park's Reanimation album.

 

Also, I've never found a cover of The Imperial March that I didn't love. No surprise, given that I firmly believe that piece to be the undisputed pinnacle of all humanity's musical achievements.

Electric Hellfire Club's version of Sympathy for the Devil, KMFDM's cover of Mysterious Ways, and almost anything by Me First and the Gimme Gimmes.

Hallelujah by Pentatonix (there aren't too many covers by Pentatonix that I don't like, to be honest)

Sound of Silence by Disturbed (not sure it is better than the original, different and evokes emotions differently; but I love them both)

Man of Constant Sorrow by Home Free (best version I have have ever heard) 

Speaking of Wagon Wheel, I also love the cover of it that Darius Rucker did.

Pretty much anything done by 2Cellos, but notably their medley of The 1812 Overture and Iron Maiden's The Trooper.  Their Thunderstruck cover is also especially awesome.

At the moment, none come to mind.

 

But I do tend to like orchestral arrangements of famous songs or soundtracks. Going from a five man band studio recording to an 80 piece orchestra with dozens of choir singers can give quite a new appreciation to any musical creation.

 

Old video game music benefits the most. Going from 8-bit digital to real life concert hall is quite an achievement.

I generally enjoy most cover versions of songs, remixes not as much. Although there are a few I like. Usually when I find a cover tune I enjoy I already like the original. So I'd say I don't really like it more or less than the original. Some examples of stuff I really enjoy includes CoC's Green Manalishi (Probably covering a cover on that one), Voivod's Astronomy Domine, Denzel Curry's I against I, everything from Brown Sabbath and Richard Cheese, and so on. One song I've particularly liked is The Bad Plus' cover of Pink Floyd's Comfortably Numb. But I'm a sucker for Jazz:

Wow, I think this is the first GTKY question I've answered in September. Busy month!

 

Can't think of any one in particular, but I do enjoy most covers over the originals.

I can think of one in particular I hate. I can't recall who it was by or its name, but it was a rock cover of "What a Wonderful World" by Louis Armstrong (love that guy). I was actually kinda insulted by that remix. Why? 'Cuz I'm weird. ::P:

There's several from Broken Peach on Youtube. In particular their covers of 'This is Halloween' and 'Pink Elephants on Parade'. Also Steam Powered Giraffe's cover of 'Diamonds' by Rhianna. I've never heard the original, not my kind of music, but the cover is awesome.

Long list. I can probably just blanket say anything Chris Cornell covered acoustically is my favorite version of that song.

A couple leap out at me that I enjoy (not necessarily more than the originals)

 

1) Bobaflex - The Sound of Silence - better than Godsmack's cover IMO.

 

2) Billie Joe Armstrong - Manic Monday - I don't think it can ever be as good as from the Bangles, but it has found it's way on my playlist.

 

3) The Wallflowers - Heroes - this can't ever beat the original (David Bowie!) but it sure is a nice listen. And it makes me think of The Replacements, my favorite Keanu Reeves movie.

 

Only remix I can think of right now is a Whitney Houston one I keep hearing on the radio when in the car. Kygo & Whitney Houston - Higher Love. I like the faster beat, doesn't take anything away from her vocals.

I generally don't care for remixes.

I'm not a fan of his, but Marilyn Manson's cover of Sweet Dreams by the Eurythmics is incredible. He makes it creepy as hell.
