Question, April 13th: How do you crack eggs? What is your specific technique (if you cook) ?

Smack it on the counter. Just right wherever I'm cooking. 😁 I'm just gonna clean it again anyways, and I've had bad luck at being too successful on corners before.

Most of the time it's some taps on the side of the bowl/pan. The end results are rarely as satisfying as I'd hope.

I have a small plastic jug that I use.  I crack the egg on the rim and empty the contents into the jug.  Any stray fragment of shell is relatively easy to see and remove from the jug before the egg is added to the pan or wherever it is destined.

Question, April 12th: Why are flumphs the awesomest?

Because they were the only thing in the Fiend Folio not trying to eat and/or enslave my character? Also, floating fart monsters, what's not to love?

With grace, poise and dignity.

Serious answer... give it a good whack on the edge of a bowl, use both hands to pull apart eggshell as if their was a hinge on the opposite side of where you just made a crack, check for egg shell bits, then put into whatever cooking pan I'm using or set aside as ingredient for whatever I'm cooking. Tip: if you get bits of eggshell in your egg bowl, the best thing to get it out is another eggshell.

I wrap them on the edge of a mixing bowl or fry pan, depending on the type of eggs I am making. The split th shell & deposit the inside parts into said mixing bowl/fry pan.

I drew a blank on the Flumphs...worthless beasties.

If I'm scrambling I use the edge of the bowl I'm whisking them in or if I'm frying them I use the edge of the pan. I can crack them one handed but it's hit or miss. I first take the egg in question and tap it lightly against a hard surface on the edge where I intend to crack it. Then I take it and rap it sharply but lightly on that same edge on the inner lip of the bowl/pan. If done correctly this makes a small indentation and cracks almost all the way around the egg. then I grasp the sides opposite the crack and pull apart.

Egg shell then goes into the disposal or the compost container if I'm saving it for gardening.

Because they are about the only things we've encountered in Under Mountain that hasn't tried to kill us ::):

I was watching some cooking show or another years ago and whoever the chef was talked about using a flat surface instead of an edge to crack your eggs.  The theory was that it wouldn't make shards pointed in, so would be less likely to break the yoke as you dump the contents into whatever you are adding it to.
I've been doing it that way ever since.  I usually put down a bit of paper towel first, in case there is any egg leakage.

Rim of cast iron pan, if they're going in there.

For other purposes (mixing scrambled in a bowl, making breakfast sammiches), I use a small bowl. Crack on the rim, put the shells in the bowl for easier cleanup. I HIGHLY recommend the Hamilton Beach breakfast sammich maker (think Egg McMuffins). I have the 2-sandwich model, and it is gold in my kitchen for quick meals.

I have a small spoon to pick out any random shell bits that may escape my technique (spoon also lives in the aforementioned bowl). I rarely have shell issues, but it happens. Also good for breaking up the yolk in the sammich maker, I like a swirly egg.

As a side note, I cannot get the image of Donald J. Flumph out of my head, so thanks for that.

I smack it against the edge of the cutting board, or more rarely, the counter.  If that doesn't do it, rotate 1/4 turn and smack it again.

For years I have been rapping them against the edges of bowls, cups, glasses. Then I try to prise the halves apart. My results have been unsatisfactory most often resulting in sticky yolk winding up in unintentional places.

Hoping someone turns up with a superior answer.

Sounds like some empirical research is in order.  If you are breaking the yolk, you're using too much force.  If the shell does not crack enough to open easily, it may be the surface you used, or  the amount of force (not enough) or even the age of the egg (the shell membrane toughens with time)

This sounds like an optimal method to me, though I don't use the edge of the pan because it wears the finish on my nonstick surface and I don't like fishing shell bits out of a hot pan.

Anyone else curious to see what a Vortex Mixer or paint shaker would do to an egg? (Pre-scramble it?)

You know the size is about right.

I will add an addendum that I don't use nonstick pans. All the pans I own are either steel or cast iron, so adjust accordingly if you're trying my method. I have a friend who taps the side of her egg with a spoon to crack it then opens it the rest of the way.
